Awesome Spinach & Vegan Cheese Calzone

We made the best Spinach & Vegan Cheese Calzones for dinner the other nigh!

Here's the instructions if you're looking to duplicate my masterpiece:

Crust/Topping:
1 Pizza Dough Ball (I got Wheat from Trader Joe's)
1 TSP Vegan Parmesan Cheese (Recipe Below)
1 TBSP Olive Oil

Filling:
1 Package Extra Firm Tofu (Drained w/ excess water removed)
1 Package (10 oz) Frozen Chopped Spinach
1 Package (8 oz) Daiya Mozzarella Cheese
1/4 Cup Egg Substitute
1/2 Cup Milk (Almond or Soy)
1 TBSP Vegan Parmesan Cheese
1 TSP Salt

Dipping Sauce:
1 Jar Marinara

Instructions:
Preheat the oven to 450 degrees with the pizza stone inside.  Crumble the tofu and combine with all of the other ingredients for the filling.  Divide the pizza dough ball into two, set one aside.  Work the dough into a circle, about 12".  Place the filling on one side of the, leaving about 1" around the edges.  Fold the dough over to enclose the filling. Roll up the edges with your fingers to close tightly and prevent leaking. Cut a few slashes in the top to allow steam to escape during baking and brush with the olive oil & Parmesan mixture.  Cook at 450 degrees for about 15 minutes or until golden brown and delicious!

Vegan Parmesan:
1 Cup nutritional Yeast
1/2 Cup Whole Almond
1/2 TSP Salt
Instructions: Combine in a food processor to a fine powder.
